This Recipe Uses Eggs
Eggs are an important part of these blueberry banana muffins. So take note if your baby has an egg allergy.
I’ve never tried to use an egg substitute for this recipe but you can if you want to.

You can use frozen blueberries
This recipe tastes way better with fresh blueberries. But If you don’t have fresh blueberries, you can use frozen ones.
If using frozen blueberries, don’t defrost them first. Add the frozen blueberries to the batter directly.

Blueberries – It’s better to use fresh blueberries than frozen ones because they will make the muffins taste better.
You don’t have to mash the blueberries to make these muffins. The blueberries will naturally pop and squish themselves during baking.
Flour – You can choose to use whole wheat flour, all-purpose flour, or a mixture of both. I prefer to use 1 cup of whole wheat and 1 cup of all-purpose flour.
Baking soda and baking powder – help make the blueberry muffin rise and hold together.
Oil – you can use any vegetable oil of your choice. I prefer to use canola oil. Oil helps make the muffin moist since we’re not using milk and other dairy products.
Banana – Banana helps enhance the sweet flavor of the blueberries so they are essential. If you don’t want to use bananas, you can skip it from the ingredients.

- Set your oven to 370 degrees Fahrenheit
- Mix the wet ingredients in a bowl (mashed banana, eggs, oil, blueberries)
- Combine the dry ingredients in a separate bowl (flour, baking powder, baking soda)
- Mix both the wet and dry ingredients together with a rubber spatula (do not overmix)
