Blender Spinach Muffins For Toddlers – No Banana

My Inspiration for These Blender Spinach Muffins for Toddlers 

Everyone knows the story of Popeyes and his can of spinach. 

As a parent, I’m always looking for ways to incorporate more greens into my kid’s diet. 

And just like most parents, feeding kids vegetables (especially green ones) is a big challenge.

So I came up with the idea to make spinach muffins (also called green muffins) for Halloween one day.

I told my toddler that ghosts love eating them to get more energy.

Since he’s been into ghost stories recently, he ate them up.

So I’ve been making spinach muffins ever since. 

We now make them for St. Patrick’s Day as well as other days of the week. 

Important Recipe Notes on Baby-led Weaning Spinach Muffins

These Muffins have no bananas 

I substituted peanut butter in place of bananas because I know that some people don’t like bananas. 

Peanut butter gives these muffins a nutty flavor that combines well with the taste of the spinach.

I used oats to replace all-purpose flour 

I like making recipes that appeal to a broad range of people. 

So to make these muffins gluten-free, I used rolled oats in place of all-purpose flour.

This gives them fewer calories and makes them healthier than a regular muffin.

If you don’t have oats, you could use all-purpose flour instead. 

Allergy Considerations for Baby & Toddler Spinach Muffins 

These muffins use eggs 

Eggs are a common allergen in children. So make sure that your child isn’t allergic to eggs before you feed them these muffins. 

To replace eggs in this spinach muffin recipe, you could use chia seed or flax eggs. 

You could also add more peanut butter to help the ingredients bind together better.

Peanut is another common allergen in babies and toddlers.

To ensure that the ingredients bind together without using bananas, peanut butter is used in this recipe.

Make sure you watch out for signs of a peanut allergy during and after feeding your baby these muffins.

Ingredients For BLW Green Muffins

Spinach – fresh spinach is better than frozen ones. Frozen spinach has fewer nutrients and doesn’t have the same rich flavor as fresh ones. 

Rolled oats – you can use any type of oats here. Just make sure they have no artificial flavors added.

Peanut butter – I used smooth peanut butter because it’s safer for babies starting BLW. You can use other varieties if you’re making this for a toddler. 

Eggs – eggs help the ingredients to all bind together. 

Maple syrup – this is my preferred sweetener. If you don’t have maple syrup, use brown or white refined sugar instead.

Why Spinach Is Great For Babies and Toddlers

Spinach is packed with essential nutrients like iron, calcium, vitamin A, vitamin C, and folate, which are crucial for a baby’s growth and development.

Let’s break each one down.

Spinach is an excellent plant-based source of iron, which is essential for the production of red blood cells and overall healthy blood circulation. 

We won’t have enough oxygen flowing through our bodies without healthy red blood cells.

Spinach is also rich in vitamin A, which supports healthy vision, immune function, and cell growth. 

Babies and toddlers still have developing visions, so we need to make sure we do whatever we can to help them develop correctly.

Besides all these, spinach also contains dietary fiber which aids digestion and promotes a healthy gut (source).

What To Serve With Toddler-friendly Green Muffins

Serve with a spread

Spreads like jam, jellies, and cream cheese are great to serve on spinach muffins. 

These spreads will help as well if your kid is hesitant about trying them because of the bright green color. 

Putting something familiar on top of the muffins makes them more appealing to children.

Serve with some fruits 

Fruits are always great to serve with toddler meals. Any combination of berries would work here. 

When in doubt, go with your kid’s favorite fruits.

How To Cut Spinach Muffins For Baby-led Weaning

6-9 Months old

If you’re serving these muffins for babies between 6-9 months old, cut them in half.

Serving half muffins to your baby will help them to easily grasp and feed themselves.

9-12 months old

For babies and toddlers between 9-12 months old, cut the spinach muffins into small bite-sized chunks. 

This will help your kid practice their pincer grasp. 

12- 24 months and older

Toddlers between 12-24 months can enjoy spinach muffins served whole. 

At this age, they would have developed the ability to independently feed themselves items like muffins. 

Cooking Directions For Spinach Muffins

  • Set oven to 350 degrees Fahrenheit 
  • combine all the ingredients in a high-power blender like the Vitamix
  • Blend the ingredients until they’re smooth. Add more water as needed to achieve a smooth consistency (batter should not be too liquidy)
  • Spray a baking tray with cooking spray. Pour the batter into each well (don’t overload).
  • Place in the oven and bake for 45-60 minutes or until a toothpick inserted comes out clean.
  • Serve and enjoy!

Can I refrigerate these spinach muffins?

You can refrigerate these spinach muffins for up to a week. Place them in a ziplock bag with all the air squeezed out to maintain their freshness longer.

Can I freeze these spinach muffins?

You can freeze these muffins for as long as you need. They’re great for meal planning and meal prepping. 

Reheating BLW Spinach Muffins

In the oven

The oven is the best way to reheat these spinach muffins.

To reheat them evenly, cut them in half before placing them in the oven. Heat at low heat (350 degrees Fahrenheit) until they are evenly hot and crisp.

In the microwave 

You can also reheat these muffins in the microwave. For best results, cut them in half and heat them uncovered. 

This will prevent moisture buildup and soggy muffins.
