Why I Love Making Vegetable Egg Cups for Baby & Toddlers 

These egg cups are easy to make 

I started making veggie egg cups for my baby and toddler when they were little. 

At the time, my youngest was still doing baby-led weaning, and I needed a quick and healthy breakfast to make.

So instead of making the quiche that took a long time, I whisk together some eggs and mixed vegetables, and the result is this lovely egg bake recipe for kids. 

They’re great for meal-prepping 

The best thing about making these veggie egg bites is that they can be frozen later.

You can make them in large batches and store them in freezer bags for later use.

This will reduce your need to make meals from scratch on busy mornings.

You can use any cheese of your choice 

My kids love Mexican cheese blends and Parmesan cheese. So those are the choices I use in most meals that require cheese. 

You can choose to use any other cheese varieties if you don’t have any of those on hand.

You can add whatever vegetable you prefer 

The best thing about this vegetable egg bake recipe is you can use whatever veggies you prefer.

I like using frozen mixed veggies because they come in different varieties, and they don’t need to be defrosted before use.

In the past, I’ve used a mix of spinach, mushrooms, and broccoli.

Allergy Considerations for Vegetable Egg Muffins 

These egg muffins use eggs which is a common allergen

If this is your first time feeding your baby something with eggs, then make sure you observe them for signs of an egg allergy. 

Allergies can appear during and after meals so keep observing them for hours after they eat an allergen.

Another ingredient in these egg bites is cheese. Cheese helps the egg and other ingredients to stick together. 

Without the cheese, your egg muffin will crumble easily.

It’s important to note that some babies and toddlers are allergic to cheese. So make sure you observe them for signs of an allergy after eating.

Ingredients For Baby-friendly Veggie Egg Bites 

Eggs – you can scale the recipe by adding more eggs to the mixture.

Cheese – Any cheese will work for this recipe. I prefer Parmesan cheese or a Mexican cheese blend. 

Seasoning – you can add whatever seasoning of your choice. You don’t have to use the same ones I did. 

Vegetables – If using frozen mixed vegetables, don’t defrost them first. Use them frozen for the best results.

Serve with some carbohydrates

Carbs like waffles, pancakes, and bread will be great to serve with veggie egg bites. 

The best part is that you can add some more vegetables to the pancakes and waffles for your baby.

How To Cut Veggie Egg Bake For Baby-led Weaning

6-9 Months old

Veggie egg bake can be served to babies between 6 and 9 years old cut in half.

Cutting them in half will enable your little one to grab them more easily.

9-12 months old

Babies and toddlers between 9 and 12 months old can be served veggie egg bites cut into small chunks. 

At this age, they would have developed their pincer heaps to be able to eat smaller pieces of food.

12- 24 months and older

Toddlers between ages 12 and 24 months can be served vegetable egg muffins in whatever way they’re more comfortable with. 

They’ll be able to eat them either with a fork or with their hands. 

Cooking Directions For baby-friendly vegetable egg Muffins 

  • Set the oven to 365 degrees Fahrenheit 
  • Grease a muffin tin and set it aside.
  • In a bowl, combine all the ingredients, and pour the mixture into the muffin wells. Don’t overfill.
  • Bake in the oven for 15 – 20  minutes or until the center of the egg muffins have hardened.
  • Remove from the heat and serve

Can I refrigerate baby-friendly egg muffins?

These baby-friendly egg muffins can be refrigerated for a few days. 

It’s best to eat them immediately after cooking, but it’ll still taste good when refrigerated.

Can I freeze baby-led weaning veggie egg bites?

These baby-led weaning egg bites can be frozen for as long as you need. 

It’s best to place a piece of parchment paper between each egg bake to prevent them from sticking together when frozen.

This will make defrosting them a lot easier.

Reheating BLW Vegetable Egg Bake 

In the oven

Frozen egg bakes should be defrosted before reheating in the oven. This will ensure that the egg bites reheat evenly.

In the microwave 

The microwave is the easiest place to reheat egg bites. 

Wrap them with a damp paper towel and heat on high power for 1-3 minutes. 

Make sure there’s no cold or frozen spot before eating. 

Tips for Picky Eaters

Don’t pressure

Give your baby or toddler a chance to say no. It’s okay if they don’t like what we serve them. Keep trying. 

It takes at least 30 exposures for a baby to begin liking a food, so don’t give up.

Make it into a game

Sometimes I create games around the food I serve to get my kids interested in eating. 

A game we’ve played in the past is called “Here comes the airplane… open the garage”. This encourages them to open their mouth as I bring the food in like an airplane.

Sometimes my kids will try new foods this way.
