Quick Baby-friendly Breakfast Egg Casserole (Egg Bake)
What’s better than a breakfast that you don’t have to stand over the stove to cook?
Egg bake for babies is one of my favorite recipes to make for my kids.
The best thing about this breakfast egg casserole for baby-led weaning is that you can make it ahead and store the leftovers in the fridge for the next day. You can also freeze it for later use.
This recipe is made in a baking pan with all the ingredients combined. Besides chopping the ingredients and throwing them in, you don’t have to do anything special.
I like to use any leftover vegetables in my fridge to make my egg bake casserole. So the ingredients used will be different for everyone.
Why I love this Egg Bake Recipe for Babies
A long time ago, my husband asked me why I stress myself making breakfast from scratch every morning (I still do but not as much anymore lol).
He suggested that I look up sheet pan breakfast and dinner and make them instead.
I thought he had a great idea. So I went in search of some recipes I thought my kids would love.
My kids didn’t like any of the recipes that I tried, and that’s when I decided to create my own.
That’s how this baby-led weaning breakfast casserole was born.
I made the steps so simple so that anyone can make it easily. It doesn’t require any complicated ingredients or preparation.
Important Recipe Notes on BLW Breakfast Egg Casserole
Egg is a common allergen in kids
If this is your first time making this recipe, I want you to know that egg is a common allergen in babies. So make sure you watch out for signs of an egg allergy after your baby has eaten.
You can use any vegetable of your choice
I’ve used peppers, mushrooms, and other leftover vegetables in the past. So the main vegetable you use will depend on you and your baby’s preference.
Skip the bacon for younger babies
I added bacon to my recipe because my kids are a little older now and love bacon.
When my toddlers were still doing baby-led weaning, I didn’t use a high-sodium ingredient like bacon.
Ingredients For BLW Breakfast Egg Bake
Eggs – Eggs help bind the vegetables together. I used large eggs in the recipe.
Vegetables of your choice – I used spinach today to make my breakfast egg casserole. I’ve used mushrooms, peppers, and broccoli in the past as well. Use whatever vegetable your baby prefers.
Bacon – I added bacon to this egg bake recipe because it gave it more texture. My kids are toddlers now so they’re able to eat bacon. But when they were younger, I didn’t include bacon in their diet due to its high sodium content.
Cheese – I used a Mexican cheese blend for this recipe. You can choose to use cheddar cheese, parmesan, or whatever type you prefer. Do not use soft cheeses for this recipe.
Potato Tater tots – I use potato tater tots for my egg bake casserole because they add more bulk to the meal and help everyone stay full for longer periods. You can also use hash browns as well

Cooking Directions For Breakfast Egg Casserole for Baby
- Heat the oven to 375 degrees Fahrenheit
- In a medium bowl, whisk the eggs, cheese, tater tots, and vegetables together.
- Pour the mixture into a baking pan. Spread the bacon on top if using.
- Bake for 25-30 minutes, or until the center of the egg bake has hardened.
- Remove from the heat and serve when cooled.

A side of toast
If you didn’t put any tater tots in your breakfast egg casserole, then you can serve it with some toast on the side.
The extra carb will add some bulk to the meal and help your baby stay full for longer.

Add some fruits to the side of this egg bake to balance out the meal.
The pairing of sweet with savory is great for a baby’s palate.
How To Serve Egg Bake For Baby-led Weaning
6-9 Months old
At this age, allow your baby to scoop the egg bake with their hands directly from the high chair or on a plate.
9-12 months old
Introduce a fork to help your baby eat. You can preload the fork to help make things easier.
If they get frustrated, allow them to continue eating with their hands.

Tips for Picky Eaters
Don’t pressure
Give your baby or toddler a chance to say no. It’s okay if they don’t like what we serve them. Keep trying.
It takes at least 30 exposures for a baby to begin liking a food, so don’t give up.
Make it into a game
Sometimes I create games around the food I serve to get my kids interested in eating.
A game we’ve played in the past is called “Here comes the airplane… open the garage”. This encourages them to open their mouth as I bring the food in like an airplane.
Sometimes my kids will try new foods this way.

Storage Tips For Baby-Friendly Egg Bake
Can I refrigerate Egg bake for baby?
In the fridge, you can refrigerate egg bake for a baby for up to 5 days. Just make sure you seal it in an airtight container or wrapped tightly in tin foil (least preferred method). This will prevent oxygen and bacteria from getting inside and accelerating its spoilage.
Can I freeze breakfast egg casserole for baby-led weaning?
Yes, you can! My preferred method for meal prepping is to freeze my breakfast casserole. This ensures that they’ll last much longer.
Reheating BLW Egg Bake
Do not reheat the breakfast casserole from frozen. This will result in it being very soggy. It will also result in some parts of the food not heating up correctly.
You need to place it in the fridge or on the counter to defrost first before you proceed to heat it.
In the oven
To reheat the egg bake in the oven, bake it slowly at 350 degrees Fahrenheit for 15-20 minutes or until it’s heated all the way through.
In the microwave
reheat the egg bake in the microwave at high power for about 3-5 minutes or until the center is hot all the way through.
