Baby-led weaning spinach egg muffins have become a favorite in my home since I started making them.
I love these spinach egg cups because you can use any vegetables you prefer to make them.
They take less than 30 minutes to make and can be prepped overnight to save you time in the morning.

Why I Love This Spinach Egg Muffin for Baby-led Weaning
I started making egg muffins when my oldest was doing baby-led weaning.
I would make him egg omelets almost every day because it was the only easy breakfast I knew how to make for a baby.
One day, he just refused to egg them and I knew I had to find an alternative recipe because he’d grown tired of the egg omelets.
That’s when I started making egg muffins.
To keep this recipe interesting for your baby or toddler try changing up the type of vegetable you include in the eggs every time.
They’ll think it’s a new food.
For this egg muffin recipe, I used mushrooms and spinach. I’ve also made them in the past with peppers as well.
For those who are dairy-free, you can choose to omit the cheese or replace it with vegan cheese.

What Age Baby Is This Egg & Spinach Muffins For?
These spinach egg muffins are great for babies and toddlers of any age. I make them for my toddler who’s currently 2 and my 7-month-old baby.
They both love it.
My toddler loves it with ketchup, and I serve it plain for my baby.

You can make these egg muffins dairy-free
These spinach and egg muffins can be made dairy-free. To do so, just skip the steps about adding the cheese.
Note that your egg muffins may not stick together as well as they would with cheese added.
You can also use vegan cheese like this one on Amazon.
In this case, it’s best to use cupcake liners like this one on Amazon to help hold everything together. It’ll make removing the egg muffins from the cupcake pan easier.
You can substitute spinach with any veggie of your choice
Although this recipe uses spinach and mushrooms, you can substitute it for a different vegetable of your choice.
In the past, I’ve used peppers, peas, and carrots. They all come out good because the base is always the same.

Serve it with bread
Although eggs are very nutritious, they may not be as filling as bread. Bread has more carbohydrates which provide energy for your baby.
So a side of toast with butter will provide extra calories and fat that your baby needs.
Serve egg muffins with fruits
The contrast between the sweetness of fruits and the savory flavor of the eggs will make it more enticing to babies.
They’ll be more inclined to eat the egg muffins if they have some fruits to go with it.
Ingredients for Baby-led Weaning Spinach Egg Muffins
Eggs
Milk – Milk helps to soften the eggs so you can whisk it easier. You don’t have to use milk if you don’t want to. You can use water as a replacement.
Spinach – Spinach helps to give the egg muffins more nutrients. You can add other vegetables if you want. You don’t have to stick to just spinach.
I added mushrooms to the recipe to bulk it up some more. My oldest will only eat eggs with spinach and mushrooms in them.
Cheese – Cheese helps to bind the eggs with the vegetables. If you don’t use cheese, your spinach egg muffins will crumble. You can use vegan cheese if you want.
Cooking Directions For Spinach Egg Muffins For Baby
- Set your oven to 375 degrees
- Whisk the egg in a medium bowl.
- Add in the chopped spinach and mushroom (you can skip the mushroom if you’re not using it. You can also add in any other veggies of your choice)
- Add the cheese and stir everything together.
- Grease a muffin pan with cooking spray. Pour the egg mixture into each well (don’t fill them to the very top)
- Sprinkle some cheese on top of each well
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean

How To Make This Egg Muffin Dairy Free
To make this egg muffin dairy-free, you can omit the cheese and bake the veggie and egg mixture on its own. Note that without cheese, your egg cups may fall apart after you remove them from the muffin pan.

How long do egg cups last in the fridge? (How long do egg muffins stay good for?)
Egg cups last up to a week in the fridge before they start to go bad. The egg muffin I made using this recipe lasted 6 days in the coldest part of the fridge. Make sure to check it for any sign of spoilage before feeding it to your baby.
Signs of spoilage include foul odor, mold growth, and any form of discoloration that wasn’t present before. I like to cut my egg muffin in half to check it properly for spoilage.
If you don’t have a problem eating old leftovers, you can feed them to your baby as long as it isn’t spoiled.
Why do my egg muffins fall apart?
If your egg muffins fall apart after you make them, it could be because you didn’t use enough cheese, you didn’t use enough eggs or you added too many vegetables.
Cheese is what helps the eggs stick to the vegetables. Not using enough will prevent the egg and veggie mixture from sticking together.
You also have to have the right ratio of eggs and vegetables. Using too many veggies could overwhelm the egg muffin mixture and using too little eggs can also do the same.
So it’s best to have the proper ratio of eggs, cheese, and vegetables to achieve a good egg muffin that doesn’t fall apart.

Egg muffins can stay in your freezer for months without spoilage as long as you put them in an air-tight container. To make egg muffins last long in the freezer, avoid opening the sealed container and taking them out until you’re ready to eat them.
