Why I Love This Carrot Pancake Recipe for Baby-led Weaning 

Carrot pancake is one of the best foods to feed during baby-led weaning. This carrot pancake can be made in multiple ways for babies and toddlers to enjoy. You can choose to use eggs or no eggs to make the pancake batter. That’s why I love it for my kids.

When I first started baby-led weaning, carrots were my go-to meal. Whenever I got too busy to make lunch, I’d just boil some carrot sticks for my kids. For dinner, I made carrot pasta, carrot fritters, and other recipes.

What Age Baby Is This Carrot Pancake Recipe For?

This carrot pancake recipe is great for all ages. I have a baby and a toddler and they both love them. 

As long as you cut the pancakes into the right shapes and sizes, you can feed them to your baby starting from 6 months old. My toddler is currently 2 and a half, and he still loves this recipe.

Why Carrot is Good for Babies and Toddlers

Carrots are an excellent source of vitamin A. Vitamin A helps maintain the health of the eyes. 

They also help maintain blood sugar and heart health. On top of all that, they contain fiber that will help maintain your baby’s gut health (source).

Carrot pancakes are a great way to feed this healthy vegetable to your baby.

Cut into spares

This is best for babies younger than 9 months because they may not have developed their pincer grasp yet.

Baked into fritters

Carrots can be grated and mixed with flour to make fritters. These are delicious and easy for babies to hold. It makes it easy for them to self-feed.

Make carrot meatballs

Carrots can be mixed into meatballs for babies to easily eat. Carrot meatball is a self-contained healthy meal that babies will love.

Ingredients for Baby-led Weaning Carrot Pancake

  • 1 cup pancake mix (see below on how to make your own pancake mix)
  • ½ cup water (adjust to your desired thickness)
  • ½ cup cooked and mashed carrots
  • Cooking spray 

Ingredients For Pancake Batter WITH EGG

Note this recipe will make ½ cup of pancake mix. You can scale up to make more mix. 

  • 1 cup all-purpose flour ( I use whole wheat flour)
  • 1/4 tsp baking powder
  • 1 tsp baking soda
  • 1 cup milk or water (more if the batter is too thick)
  • 1 egg (see below for egg substitute)

Making Pancake Batter WITHOUT EGGS

You can substitute eggs in your pancake mix with foods like peanut butter, applesauce, flaxseed, and so much more.

To make your own pancake mix, follow the instructions above. Substitute one of the following items below for the eggs.

Egg substitute Number of “egg” made
3 tbsp peanut butter1 egg
½ mashed banana1 egg
1 tbsp mashed sweet potato1 egg
¼ cup applesauce1 egg

Steps for making pancake batter with or without eggs

  • Mix the flour, baking soda, and baking powder together in one bowl (dry ingredients)
  • Mix the milk, egg, or egg substitute together in a separate bowl (wet ingredients)
  • Combine both wet and dry ingredients into one bowl and mix (do not overmix)

You can also use ½ cup of any premade pancake mix. In my home, we love Kodiak Protein Pancake Mix. It’s loaded with protein and made with whole wheat flour.

Cooking Directions For Carrot Pancake 

  • Boil your carrots until they’re soft enough to be pierced with a fork.
  • Mash your carrots.
  • Make your pancake mix in a medium bowl
  • Combine the carrot and pancake mix
  • Pour the water into the bowl and mix (don’t overmix)
  • Place a pan on the stove on medium heat
  • Spray the pan and wait until it’s hot
  • Pour in some carrot pancake mixture and let cook until you see bubbles appearing on the top
  • Flip your pancake and cook the reverse side until done
  • Remove from heat and serve

Serve with fruits

Adding fruits as a side will make this spinach pancake a complete meal. Fruits are very good for baby-led weaning. It provides different textures for babies’ senses. This is important when they’re starting solids. Fruits are also nutritious for kids.

How to feed carrot pancake to babies ages 6 – 9 months old

Babies ages 6-9 months old can have carrot pancakes cut into strips. The strips should be large enough to fit on two adult-sized fingers put together. This will make it easier for them to grab and self-feed.

How to feed carrot pancakes to babies ages 10 – 12 months

Babies from 10 months old can handle pancakes cut into small bite-sized pieces. At this age, they’ve developed the pincer grasp which allows them to pick up food with their thumb and pointer fingers.

Storage Tips for carrot pancake

This carrot pancake can be frozen in the freezer for up to a week. To reheat it, just let it defrost in the fridge overnight or leave it out on the counter for a few hours. You can then reheat it in the oven or microwave for a few minutes.
