Broccoli egg muffins for baby-led weaning are the perfect combination of healthy and delicious. 

It’s packed with protein, vitamins, and other nutrients that your baby needs. 

You may have heard this recipe called a variety of other names such as broccoli egg bake, crustless quiche, and broccoli egg bites. 

Whatever the name, the broccoli florets in this egg muffin give it a distinctive green color while the cheese adds an extra layer of flavor that everyone will love.

Why I Love this Broccoli Egg Bites For Baby

I love making broccoli egg bites for baby and toddlers because it’s such a quick breakfast.

It takes about 5 minutes to prepare it in the morning. 

I place it in the oven to bake, then I go wake the kids up to get them ready for the day. 

By the time they’re all dressed and ready, the broccoli egg bake will be ready to eat.

It can’t get any easier than that.

Besides the simplicity of this recipe, I also love it because of the amount of nutrients that broccoli and eggs contain.

Why Broccoli Egg Bakes are Good For Babies and Toddlers

Broccoli egg bakes are great for babies and toddlers as a quick morning breakfast.

Broccoli contains vitamins C, A, K, potassium, and folate (source), and eggs contain protein that kids need to grow strong muscles and bones.

Important Recipe Notes on BLW Egg Muffin 

These broccoli egg muffins are small

These egg muffins are small because they don’t use flour, baking soda, or baking powder. 

Those are usually what makes muffins rise.

Since we can’t use those for breakfast egg muffins, they come out small and flat.

That shouldn’t affect their taste at all. They are still delicious. 

Use only the broccoli florets 

I advise that you only use the broccoli florets because they incorporate better into the egg bake.

The stalk may not cook quickly enough and may make the egg muffins fall apart if they’re chopped too large.

So for that reason, I only use the broccoli florets.

Ingredients For Broccoli Egg Muffins For Baby

Broccoli – I use just the florets when making broccoli egg muffins for a baby. That’s because babies have a hard time chewing broccoli stalks. 

Cheese  – Cheese helps to bind the egg together so you don’t want to skip this ingredient. 

You can use any cheese of your choice. I used 3 Italian Cheeses for this recipe. You can also use cheddar cheese, Mexican cheese blend, or Parmesan. 

Eggs  – use any kind of eggs for this recipe.

Spices  – I like adding some simple spices like paprika, garlic, and onion to this recipe.

Step 1

Combine the eggs and broccoli

What To Serve With Broccoli Egg Bites For Baby

Serve them with fruits 

These broccoli egg bites taste very well with fruits. Some of my favorite fruits to serve with them are blueberries, strawberries, and raspberries. 

Serve broccoli egg bake with protein 

If you’re feeding this broccoli egg bake to a toddler, then you can serve it with some bacon or sausage. 

If your baby is too young for bacon or sausage, you can serve it with plant protein instead. Some plant protein ideas are peas, beans, and tofu. 

How To Cut Broccoli Egg Muffins For Baby-led Weaning

6-9 Months old

To cut broccoli egg muffins in half for babies between 6-9 months old. This will allow them to easily grasp them to eat.

9-12 months old

Babies between 9-12 months old can have broccoli egg bites cut into chunks. They should be able to eat them this way. 

12 – 24 months and older

By 12-24 months, you can either continue to cut broccoli egg bake into chunks or serve them whole for babies to pick up with their hands.

Cooking Directions For Broccoli Egg Muffins

  • Set oven to 350 degrees Fahrenheit 
  • Whisk the egg, cheese, broccoli, and spices together.
  • Grease a muffin pan, and pour the mixture into the wells. Add a little cheese on top of each egg mixture. 
  • Place in the oven and bake for 30 minutes. 
  • Served when cooled

Storage Tips For Broccoli Egg Muffins

Can I refrigerate Broccoli Egg Muffins for a baby?

You can refrigerate these broccoli egg muffins for up to a week. Sealing it in an airtight container to prevent moisture from seeping inside.

Can I freeze broccoli egg muffins for baby-led weaning?

These baby-led weaning broccoli egg muffins can be frozen for as long as you need. 

Before freezing, wrap them in parchment paper individually to prevent them from sticking together when frozen.

Also, make sure you place them in a Pyrex container to freeze.

Reheating Broccoli Egg Bites For Baby

In the oven

Before reheating, make sure you thaw the frozen egg muffins completely. 

To reheat broccoli egg bites for your baby, place them in a baking tray and heat at 350 degrees Fahrenheit until it’s evenly heated. 

In the microwave

To reheat broccoli egg bites in the microwave, heat for about 1-5 minutes on high power or until it’s evenly heated.

Tips for Picky Eaters

Don’t pressure

Give your baby or toddler a chance to say no. It’s okay if they don’t like what we serve them. Keep trying. 

It takes at least 30 exposures for a baby to begin liking a food, so don’t give up.

Make it into a game

Sometimes I create games around the food I serve to get my kids interested in eating. 

A game we’ve played in the past is called “Here comes the airplane… open the garage”. This encourages them to open their mouth as I bring the food in like an airplane.

Sometimes my kids will try new foods this way.
