Sweet Potato Scrambled Eggs For Baby – Easy and Delicious!
Did you know you could add sweet potatoes to eggs for your baby?
I made this sweet potato scrambled eggs for baby because I had excess sweet potatoes at home.
Sweet potatoes are so versatile that you could put them in anything and it’ll still taste good.
The other day my mom brought me 3 bags of sweet potatoes that I didn’t know what to do with.
I made sweet potato muffins and sweet potato pancakes with some of them.
I’ve added some to pastina pasta too, and my baby and toddler have loved every recipe.

My baby loved the slight sweetness of the root vegetable, which contrasted well with the taste of the eggs.
I’ve always had a hard time getting my baby to eat eggs. My toddler on the other hand loves them and will eat them for breakfast, lunch and dinner.
This sweet potato egg scramble was the first time I was able to get my baby to enjoy eggs.

It goes without saying that this sweet potato scrambled eggs for babies has eggs in the recipe.
If your baby has an egg allergy then you should definitely not make this for them.

I used bacon fat for this recipe but you don’t have to.
Since I’m feeding this sweet potato scrambled eggs to both my baby and toddler, I like to add some things that my toddler likes in it.
My toddler loves the flavor of bacon so I added them to this baby scrambled egg recipe for him.
Because bacon is salty, I only use the fat and grease from them. I remove the bacon before continuing with the recipe.

What to serve with BLW Sweet Potato Egg Scramble
Serve with a side of fruits
You can never go wrong with fruits on a baby’s plate.
The contrast between the sweetness of the fruits and the savory taste of the eggs will be good for your baby’s palate.
Serve with bacon for toddlers
Since this sweet potato scrambled egg uses bacon grease, you can serve it with a side of bacon.
Note that this should only be done for toddlers because bacon is high in sodium, and shouldn’t be fed to babies.
How to Serve Sweet Potato Scrambled Eggs To Babies
6 – 9 months old
You can serve these sweet potato scrambled eggs directly on the high chair tray. Let your baby practice scooping the food with their hands.
This skill is essential for them to learn to self-feed in the future.
10- 12 months old
You can provide a fork or spoon to help babies in this age group feed themselves. If they get frustrated with scooping, feel free to pre-load the spoon for them.

Tips for Picky Eaters
Don’t pressure
Give your baby or toddler a chance to say no. It’s okay if they don’t like what we serve them. Keep trying. It takes at least 30 exposures for a baby to begin liking a food, so don’t give up.
Mold the sweet potato scrambled eggs into a ball
Something I’ve tried in the past to get my baby to eat sweet potato scrambled eggs is molding it into a ball.
You can do this by mashing the sweet potato with a spoon and mixing it into the egg. Then roll it into a ball with your hands.
The sweet potato will help the eggs stick together.
This will essentially convert the scrambled eggs into finger food that your baby will be able to pick up independently.
Ingredients for Baby Sweet Potato Scrambled Eggs
Eggs – I used 4 in this sweet potato egg scramble but you can use less if you’re cooking for fewer people.
Sweet potato – this is the main ingredient. Some people steam and puree their sweet potato for the egg scramble, but I prefer to dice and cook mine. This gives it a better texture. You can do it however you prefer.
Veggies – You really don’t have to use any veggies for this recipe. My kids love mushrooms so I like to add it to eggs for them.
Bacon is not required at all. Just use regular vegetable oil instead.
Water – helps you cook the sweet potato until soft. If you dice them as I did, you’ll be able to cook them in a pan with that amount of water,
Cooking Directions – Sweet Potato Scrambled Eggs For Baby
- In a medium pan, add the potatoes and water. Cool until soft enough to squish between your fingers. Add more water if needed until done.
- Scoop out the potatoes into a separate plate. Dry the pan with a paper towel to remove any leftover water.
- Place your bacon in the pan and cook until your desired doneness. Remove the bacon and leave the bacon grease on the pan.
- Add your veggies if using, and cook for 2 minutes.
- Add the sweet potatoes, Ionian powder and any other spices of your choice. Add the eggs and let it cook a little before scrambling it.
- Remove from the heat and serve
Cook the bacon to extract the grease
Remove the bacon and sautee the onion in the grease
Cook the sweet potato until soft
Add the oil and veggies and let cook a few more minutes
Add the eggs and let cook before scrambling

Ingredients
- serves 2 kids and 1 adult
4 eggs (reduce the amount if you’re feeding fewer people)
1 small sweet potato (diced)
Mushrooms or other veggies (optional)
3 slices of bacon (optional. I use the grease only. You can also just use oil)
1 TBSP oil (if you’re not using bacon grease. use half to saute the onion and the other half before you add the eggs in)
1 tsp onion powder (optional)
¼ cup water (or as much as you need to cook the sweet potatoes until soft)
Directions

Storage Tips For Baby Sweet Potato Scrambled Eggs
You can precook the sweet potato and save it in the fridge for use the next day. You can also prepare the whisk eggs in a bowl overnight.
Other than preparing the ingredients the day before, I wouldn’t suggest you save sweet potato scrambled eggs for later.
It just won’t taste as fresh being kept in the fridge.
